Hit and Miss

There are some things I cook that sometimes work and sometimes don't. I do the same thing every time, and have taken advice from any number of successful chefs, but am obviously missing that little extra that takes me from 'ok' to 'perfection'. If I make a list of these dodgy dishes then you can set your expectations next time you come for dinner. So in no particular order...

Pork Crackling
Roast Potatoes
Yorkshire Puddings

  1. The secret of yorkshire puddings is very very hot fat. Use lard and put in the oven at very high temperature (do this when you have taken your meat out to relax). When it is smoking pour in the yorkshire pudding batter and it should sizzle. Nothing more difficult...
