Daal
I think Daal is one of my favourite foods. It's my go to dish if I'm on my own, and I try to include it in every Indian meal I cook. It's packed with protein, and it's vegan. Oh, and it's simple...
Chop an onion and soften it (fry gently) in oil. Add a heaped teaspoon each of ground coriander, cumin and turmeric. Toss in around 6-8 handfuls of red lentils. Stir quickly, then cover in vegetable stock (I use Margigold vegetable bouillon). Simmer for 20-30 minutes until the lentils are soft and the stock is absorbed. Drain a can of chick peas and add to the daal. And... that's it....
Sometimes I may add peppers, or bacon, or server with a swirl of mayo.
It's good as a spread on a wrap too.
